Kickass Kebab

Ingredients

● 2 kilo ground beef
● 1 onion, pureed in blender
● 4 cloves garlic
● 3 tbsp fresh parsley, minced
● 2 tsp. ground cumin
● 2 tsp cinnamon
● 1 tsp ground nutmeg
● 1 tsp paprika
● 1 tsp turmeric
● 1 tbsp tomato paste
● 1 egg
● ¼ c semolina (or chickpea flour for gluten free)
● 2 tbsp pine nuts (optional)
● 1 tsp olive oil
● 1-2 tsp. salt

Directions

  1. Mix all the ingredients well and rest the meat in the refrigerator, 1 hour or overnight.
  2. When ready to shape, rub olive on your hands and mold into 8 oblong shapes approximately 11⁄2 by 31⁄2 inches, or mold the meat onto a skewer - or try on a cinnamon stick! - pressing tightly with your hands.
  3. Grill over a medium hot fire flipping occasionally until the meat feels firm to the touch
  • *If using a wooden skewer, make sure to soak in water beforehand to prevent from burning on the grill
